$100 MARKET BAG

The joy has returned to the faces of many as the Fresco Life Market Bag Service was launched last week. With recipes being shared by our team, we hope that you will follow suit and show us some of the simple ways that you utilized your items to eat fresh daily.

This last offering has raised some questions that I just wanted to share some of our thinking on:

Why $100?

Fresh vegetables and healthy eating has been cast under a shadow of being expensive or unsustainable. We believe that there must be a way for our families to eat fresh and very affordably. We challenged ourselves to come up with a mix of market items for $100 that would put flight to that idea.

Increasing Utilization

Cheaper access to food aside, my refrigerator has shown a familiar telltale - wastage. Some of the greens may have spoiled or certain items have begun to regrow for the length of time they were there.

But with a little ingenuity and a panache for colour all this can change. Here are some things I have tried successfully:

A salad is not hard nor time consuming to make

Cut a tomato in thin slices or in chunks, add black pepper or a few drops of olive oil. For color, use a single or half a leaf of lettuce as a base.

Cut up a few lettuce leaves (2-3), squeeze half a portugal on it, add a few curls of carrot for color. [I use the potato peeler with good effect to get these curls]. Shake together in a small plastic container and this is good as a side for lunch or alongside your meal.

Sweet peppers, pimentos, onions, chives

These are all great lifters or accompaniments to whatever you prepare. Experiment with adding them fresh to whatever you cook. I add them when I turn off the pot and allow the flavors to join the meal from just residual heating. Chopped fresh chives offer a great flavor to soups and broths.

The breakfast burrito is an interesting favorite. All you need is an egg and any number of items from your market bag. Try to limit yourself if you are on a time crunch. I use potatoes sliced thinly both ways and add this to the pan first with or without oil. To this I add sweet pepper, pimento, onion and maybe a few slivers of carrots for more color. Add a teaspoon of olive oil and scramble the egg with these after 5 minutes of the potato cooking.

Serve in your favorite wrap.

Adding vegetables to every meal is very possible!
